What Can I Make With Rotisserie Chicken, Spinach and Mushroom Soup
Our quick cooking version of an Italian favorite uses cream of mushroom soup to ensure moist and flavorful chicken that's accented with fresh baby spinach and Parmesan cheese. It's a 30-minute meal that's perfect for busy weeknights.
Ingredients

- 1 3/4 pounds skinless, boneless chicken breast halves
- 2 tablespoons olive oil
- 1 large onion, minced (about 1 cup)
- 1 can (10 1/2 ounces) Campbell's® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup
- 1/2 cup water
- 6 ounces fresh baby spinach (about 8 cups)
- 1/2 cup grated Parmesan cheese

- Serving Suggestion: The chicken and sauce are delicious served over hot cooked linguine.
- Ingredient Note: We develop our recipes using a 4-to 5-ounce skinless, boneless chicken breast half per serving. However, there are a range of sizes available in-store, from the butcher counter to the meat case and the freezer section. Use whichever you prefer- just follow the recipe as written above for the best result. If you're using larger chicken breasts they may require a little longer cooking time.

Step 1
Season the chicken as desired. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides. Remove the chicken from the skillet.

Add the onion to the skillet and cook until the onion is tender, stirring occasionally. Stir in the soup and water and heat to a boil. Stir in the spinach and cook until the spinach is wilted.

Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. Season to taste. Sprinkle with the cheese.

I made this recipe,but forgot the parmesan cheese! which is ok! had other ones in hand! I also used some chicken broth in it!!! whoa! this served over hot linguine pasta what more could you ask for??? 😍😍😘

Besides being very easy to make, it is very nutritious for anyone.
When you are on the go with jobs, kids, activities, etc., this is the
best style of recipe to get a HEALTHY meal on the table in 30 minutes. I love mushrooms and spinach, so I tend to add more of
each. Use canned mushrooms to add more, and instead of fresh spinach, I used frozen spinach (12oz. pkg) at least, or more if you want. In step 2, cook the mushrooms and frozen spinach, until spinach is cooked through. Continue to step 3. Enjoy ! -

I did add a sprinkle of garlic salt but kept the rest as written. Great mushroom flavor. Grated parm cheese topped it off. My husband LOVED it. I will definitely make again.

I used a low sodium can of Campbell's cream of mushroom soup. This was pretty bland so I had to use extra seasonings to boost the flavor. I cooked carrots, mushrooms, spinach, and shredded Italian cheese blend in this soup. I also made breaded chicken cutlets on the side. Served with penne pasta, and topped with a bit more shredded cheese. Not bad!
